The problem with the Mac Pro was the OS. I'd been porting a backup from my iMac for the longest time, and that apparently cocked up something in the long run. I had to reinstall from scratch, then port my files and settings over through Migration Assistant. And it hasn't had any memory problems since then. Even on Windows 7 via Boot Camp.
The sad part is that, in an ironic twist, I was thinking it was the OS install from the very beginning, but I started looking into other things because of laziness. I didn't want to reinstall everything from scratch.
Goes to show, sometimes your instincts are better than a web search.
